I heard about putting Vaseline in nose to keep it from chapping, but do you also do that to the paws or do you leave the paws alone?

The average pricing for ear crops, in my experience, is roughly between $250 to $400, depending on the vet. Honestly, if you want a nice crop, go to an experienced vet, who can show you a portfolio.
