And yesterday I tried food. She wants none of it when she is dug in, tail between her legs. Her fav food is cheese and she wanted nothing to do with it.

She also buries her tail between her legs. Like she is fearful. She always has been scared of everything.

Thus the reason I really want to get this straightened out and get her out more and socialized.

Ditch the prong collar. It's porbably not helping the situtation. If you HAVE to use something, use a gentle leader or something to that effect. Did your puppy classes actually recommend the prong? Yes they recommended the prong. She dug in most of the time during class. However for her "gradu...

Doesn't sound to strict or harsh to me.

To me this has nothing to do with the dog and more to do with the kids and bringing them up right. Sounds like he should go to a parent class rather than a dog trainer.
