Just buy a small soft muzzle from the pet store, cheap, fairly comfortable and it's just a piece of nylon and mesh so when he out grows it, no big deal. If it's too long in the muzzle, just cut to size and tape or fray stop the cut edge

Are there headrests in the back seat at all? I know my car hammock just kinda hangs off the headrests, nothing special about needed adjustable headrests to make it work. If there aren't then finding an appropriate seat cover(the people kind) is likely your best bet although I would suggest a blanket...

We have similar issues with our girls, they're great when we walk them by themselves, they show generally appropriate interest in other dogs, and get along with most of the dogs in the area. When we've got them out together it's like a switch has been thrown and they just can't deal with other dogs....
