If their weight is good, start at 2 cups and see how it goes. Feed according to condition. If they don't maintain weight add a little, if they get a little squishy, cut back. Keep in mind they may very well eat different amounts. You can also supplement with a fat source instead of feeding more dry....

Ash content is actually the minerals that are in the food, minerals don't burn so that is what's left as ash. Most foods use standardized mineral supplements, by standardized I mean AAFCO standards, and usually there isn't more than a .01% difference.

Dogs aren't carbohydrate driven. They use fat for energy. Potato and rice are fillers that they have a hard time digesting. Don't bother feeding them to your dog.

Generally his head will be the last thing to develop. Any where from 18 months to 2 years. Our little girl didn't really start to pack on the muscle till she hit 2, she's now 3 and her head finally developed at about 2 1/2.
